Potato Oaties

Ingredients

  • 1lb (450g) cooked and mashed potato
  • 6 oz (170g) fine oatmeal
  • Pinch of salt
  • Splash of milk

These can be eaten hot from the pan, by themselves, plastered with butter. They also make an excellent accompaniment to fried or grilled bacon dishes.  Try them with grilled gammon, topped with a fried egg, mushrooms and tomatoes – delicious!

Method

    1. Mix mashed potato with oatmeal & salt.
    2. Add milk to bind the mixture and make a stiff dough.
    3. Roll out to about ¼ inch thick and prick with a fork.
    4. Cut into rounds or triangles and cook on a griddle, or fry them, until golden brown
