Ingredients
- 1 slice of gammon (approx. 9” long x 4” wide)
- 6 oz/175g plain flour
- 3 oz/75g lard
- 2 tablespoons of water
- Pinch of salt
This is a recipe that dates back to the 19th Century.
In the old East Riding of Yorkshire Ham Cakes were made for workers in the harvest fields. This recipe makes 4 good separate chunks – delicious hot or cold.
Method
- Mix the flour, lard and water to form the pastry
- Roll out in a rectangle
- Lay the gammon on one side of pastry & dampen edges of pastry
- Fold the pastry over the top and seal edges. Prick the top with a fork.
- Brush the pastry with beaten egg and bake in a hot oven ( 220C/425F, gas mark 7) for 15 minutes, then reduce the oven temperature to a low 170C/325F, gas mark 3 for a further 30 minutes.
- Serve by cutting into three or four slices.
