Ingredients
- 1 quarter pint (5 fl oz/15o ml) of vinegar
- ½ oz (10g) cayenne pods
- ½ oz (10g) pickling spice
- Juice of an orange
- Pinch of salt
- 4 teaspoons of pearl barley
The ‘Celebrated Yorkshire Relish’, produced by Goodall, Backhouse & Co. of Leeds was the highest selling bottled sauce in the Victorian era. It was advertised as “the most delicious sauce in the world”. The claim spurred many local cooks to come up with their own variation on it.
In the ‘Oxenhope Church School Rebuilding Fund Recipe Book’, 1926, for example, a Mrs E. Moore suggests a recipe for her own ‘good Yorkshire Relish’. Her method was simplicity itself!
Method
- Mix all together, bring to boil, simmer for 30 minutes.
(It doesn’t say so in the recipe, but you will need to strain the liquid into a clean bottle or jar after the liquid has simmered)

I wanna try making my own any change of type of vinegar and after cooking do you strain all ingredients or liquidise everything ?
White pickling vinegar would work well. It needs to be strained after boiling.
