So if you are looking for the perfect recipe for the perfect accompaniment to fish ‘n chips, what better source than the Harry Ramsden’s ‘Taste of Tradition‘ recipe book could you ask for. And for the woefully ignorant, Harry Ramsden, at his original fish and chip restaurant in Guisley, West Yorkshire, cooked the best fish and chips in the known universe!
Ingredients
- 8 oz (225g) dried peas
- Level teaspoon of bicarbonate of soda
- 1/2 oz (15g) unsalted butter
- Salt & freshly ground black pepper
Method
- In a large basin, soak the peas overnight (or for at least four hours) in three times their volume of cold water, with the bicarb. of soda added This helps to break down the peas and keeps them green
- Rinse the peas well and put them into a medium saucepan and cover with cold water.
- Bring to the boil, then reduce the heat to very low and simmer for 1.5 – 2 hours, stirring frequently until the peas are cooked and have broken into a soft mush. If they seem too wet continue cooking over a very low heat, but keep on stirring regularly to avoid them sticking to the pan
- Beat in the butter and seasoning.

Hello, my name is Janet and I am e-mailing you from Auchterarder in Perthshire. I have just discovered your web site at exactly the right time! I am hosting a coffee morning soon for a group I attend. On this occasion we are saying goodbye to one of our members who is moving to North Yorkshire. As someone who was brought up in Yorkshire I was the obvious choice to host the event! I could think of one or two recipes my Mum used to make, but didn’t quite have the variety I was looking for.
