This ugly looking devil is a woof (or Wolf) – a type of catfish caught off the Yorkshire coast. Here’s a recipe for Woof pie from Scarborough.
Ingredients
- 1 Woof
- 4 – 6 oz (113 – 170g) lean uncooked bacon
- 2 hard-boiled eggs
- 1 small onion
Method
- If you buy a whole fish, you need to boil or steam the fish first to remove the meat from the bones
- Season the fish meat and sprinkle a little flour over it
- Cut the bacon in to small pieces
- Slice the hard-boiled eggs
- Chop the onion
- Layer all the ingredients in a pie dish
- Add half a pint of milk (10 fl oz) to the mix
- Cover with shortcrust pastry and cook the pie in a moderate oven for approx 60 minutes
