This recipe was donated by Cathy Liddle, writer and local historian, from Silsden, near Keighley, West Yorkshire. Cathy writes:
Home-made sandwich fillings were once a lovely Yorkshire tradition. This one comes from Mrs Townson of Silsden, who ran a little draper’s shop in the town.
This paste can be stored in a cold place in small jars until needed.
Ingredients
- Four ripe tomatoes
- 3 oz (85g) grated cheese
- One finely chopped onion
- 1 oz (28g) butter
- 4 oz (113g) fresh breadcrumbs
- One egg
- Seasoning
Method
- Skin tomatoes, slice, put in pan with butter & onion and mash well with a wooden spoon
- Add beaten egg
- Hold over low heat until it thickens, then add cheese, breadcrumbs and seasoning.
- Put into small pots and cover with melted butter.

Thank you so much for this….my mother used to make this when I was a child and I loved it. Googled ingredients (still have recipe now over 70 years old) but my Mother used to call it Oojah probably to encourage me to eat it. I loved it, good to know its correct name, and am going to make it this week
