Mrs Townson’s Tomato Paste

This recipe was donated by Cathy Liddle, writer and local historian, from Silsden, near Keighley, West Yorkshire. Cathy writes:

Home-made sandwich fillings were once a lovely Yorkshire tradition. This one comes from Mrs Townson of Silsden, who ran a little draper’s shop in the town.

This paste can be stored in a cold place in small jars until needed.

Ingredients

  • Four ripe tomatoes
  • 3 oz (85g) grated cheese
  • One finely chopped onion
  • 1 oz (28g) butter
  • 4 oz (113g) fresh breadcrumbs
  • One egg
  • Seasoning

Method

  1. Skin tomatoes, slice, put in pan with butter & onion and mash well with a wooden spoon
  2. Add beaten egg
  3. Hold over low heat until it thickens, then add cheese, breadcrumbs and seasoning.
  4. Put into small pots and cover with melted butter.

    Thank you so much for this….my mother used to make this when I was a child and I loved it.  Googled ingredients (still have recipe now over 70 years old) but my Mother used to call it Oojah probably to encourage me to eat it.  I loved it, good to know its correct name, and am going to make it this week
