Ruby’s Quick Tart

Here’s another of Ruby’s Yorkshire recipes – quick to make and satisfyingly sweet to eat. It has quite a boozy taste!

Ingredients

  • Shortcrust pastry, made in advance

Filling

  • 2 oz (55g) sugar
  • 2 oz (55g) margarine
  • 1 egg
  • Cup of sultanas
  • 1 tablespoon of mincemeat
  • I teaspoon vanilla essence
  • Pinch of baking powder

Method

  1. Line an 8″ circular pie dish with the pastry
  2. Mix all the filling  ingredients together
  3. Pour the mix into the pastry case and bake the tart in a moderate oven for about half an hour until the filling is firm.

I told you it was quick!

    I’ve had this as tartlets with currants or any dried fruit . Used up short crust pastry at end of baking day. Change from Jam tarts.
